Senior "Boscoe" and "Bosco" Bear Make Mexican Chocolate Crunch Brownies




Several months ago when I was coming home after my first triple arthredosis, (reconstructive foot surgery) a friend decided to lend a helping hand and bought a box of "Pillsbury Brownie Classics" with the intention of baking those for my weekly Wednesday night meeting.  Of course I was very appreciative, but the SNOB in me simply wouldn't hear of it. So the box was pushed aside and I went to work making my own "signature" brownies. Recently while looking through one of my cupboards, I came across that box. Instinctively, I began to toss it into the trash, but suddenly I decided to Google "what can you do with a boxed brownie mix" and wound up on the "Pillsbury Bake Off" page.  There amongst the myriad recipes for this year's contest, was the recipe for "Mexican Chocolate Crunch Brownies". I reviewed the recipe and decided to give it a go.  After all, I do have a hard time throwing things out, and figured it was worth a shot. Well, long story short, these brownies are incredible.  They are so good, that my friends have asked that I include them in my revolving repertoire. I used coffee instead of the water, Ghiradelli 60% chocolate chips and olive oil instead of vegetable oil. These are truly delicious. My "snob" factor definitely got knocked down a notch, and I now realize that there are some "good" things that come in a box!

I know what you mean about the whole Snob thing. That being said though, I have had some excellent tasting recipes that begin with a brownie mix or cake mix.

I've heard buzz that these are very good! We often have that Cinnamon Toast Crunch in the cupboard for my 6 year old (and hubby) so I'll have to give them a shot sometime.

I am a scratch baker, myself, but I needed to use the mix to get in the door at the Pillsbury Bake-Off. glad you liked them.

oh, of course! I should have put 2 and 2 together. I do recall reading that review you wrote. really appreciated it. wished I could have thanked you. then I found this blog post from someone who saw it and pointed me to it.

I took my family of 5 to the bake-off in dallas a few weeks ago. didn't win anything, but it was a great experience.

You are the first member of "Royalty" to visit my page and issue lovely comments. Wish I could have gone to Dallas just to witness the entire performance. I did follow it that day with the help of Pillsbury's Official Blog Master, so I was there "rooting" for you to win! YOU should have won. The winning creation (only my opinion) didn't have nearly as much originality or actual "hands on" baking skills that made your presentation stellar.

yeah, I was really bummed out. I kept running things through my head, like "did I do something wrong -- cut the brownies wrong, underbake, etc etc..." But in the end, it was probably simply that the judges all liked peanut butter and thought that recipe had the best consumer appeal or whatever. oh well, I will try again next time.

and as an aside, the only beach my kids have ever been to is Pegotty Beach in Scituate.... we go there every summer. That is a nice area that you live in! we love it.

These sounds so delicious, thanks for a great share. I just love chooclate and cinnamon together and the use of the cereal sound so intriguing.
